This approach followed in this section makes it possible to create new products or to recover substances of nutritional, nutraceutical and probiotic interest starting from by-products of the transformation processes of raw materials of vegetable, animal and fish origin.
The section is housed in the GUS 11 and GUS 15 buildings of the upper wood of the Portici Palace. The correct application of the principles of the circular economy and the green economy is based on the development of adequate enzymatic processes that allow the development of manufacturing processes for the recovery and enhancement of the by-products of primary processing.
